Nine stools, no tables. The counter is the whole restaurant. You watch the pot the entire time, which is the point. All of this is invented.

One pot, three broths. The fictional kitchen runs a 14-hour tonkotsu, a clear shoyu and a toasted miso. The spicy one is the miso with a temper.

Queue by ticket.Take a paper slip at the door. When your number lands on the rail, a stool opens. Numbers on this page are sample data.
